Arugula grapefruit salad

With temperatures high, I thought this week I would share a simple refreshing salad. This is one of my favorite go-to quick salads, and I like it because it is delicious but also I can throw it together in no time at all. It also uses ingredients that are readily available year round and pairs well with most main courses.

2 cups of baby arugula

1/2 cup marcona or slivered almonds

2 grapefruits

2t apple cider vinegar

1T olive oil

1/2 t Dijon mustard

a drizzle of honey

salt and pepper

First, make the dressing. Whisk together apple cider vinegar, olive oil, mustard and honey with the juice and zest from half of a grapefruit add a pinch of salt and a few grinds of pepper, to taste.

To make the salad, remove sections of the grapefruit by cutting in between the membranes. Toss grapefruit sections with arugula and almonds with dressing. Serve immediately.
